Meal Plan: 9/19 – 9/23

It’s been a tough week, guys…like, a really tough week.  But before we get to that, I just want to say thank you to everyone who messaged, commented, and reached out to me after SOUL squad was published. Your kindness, support, and unrelenting sense of community brought tears to my eyes and put warmth in my heart. I’m so lucky to have such amazing people in my life!

But that bright moment was, of course, met with some clouds.  I received a few hateful messages (that I don’t care to share here).  More disturbing than that, though, was this comment:

“Ummmm…u cant get raped by ur bf so obviously this is bull shit”

I won’t get into the million things that are wrong with this statement, but I will urge you to talk to the people in your life about consent.  Whether it be children you’re raising, parents you’re educating, or a sexual assault victim that blames themselves – people need to know that rape is something that can occur anytime, any place, to anyone for any reason.  Rape does not discriminate, it does not care about your relationship status on Facebook, and it sure as shit doesn’t ask permission.

That comment arrived in my inbox at 8:13pm.  I was heading home, and then somehow, I wound up at the diner with chicken fingers, mozzarella cheese fries, and three Diet Cokes.  It didn’t fill me.  I ditched the overnight oats I’d planned to eat the next morning and opted for pancakes and home fries, with a side of well done bacon.  I was unraveling.  I was out of control.  I was back at square one.

It took me a while to get a grip.  To be honest, I’m still trying to pull myself together.  I keep telling myself that this person doesn’t know me – doesn’t know what I’ve been through – but that isn’t true.  She does know because I told her – I wrote it on this blog and hit “publish”.  And she tried to erase it.  She tried to tell me that this thing I carry with me everyday isn’t true…that it didn’t happen.  But it did.  It did happen.

That being said, let’s take a look at this week’s meal plan.

1. VARIETY

 

In an effort to get some control back, there isn’t a ton of variety on this week’s meal plan.  I’m doing all my meal prep on Friday morning, and will have it all set and ready to go so that I can kick this week’s ass health style.  Consistency is something I struggle with every day.  But I know I can do this, I just need to prove it.

2. RECIPES

This week’s turkey meatloaf muffins are courtesy of Jaime Eason’s Turkey Meatloaf Muffins.  The strawberry almond overnight oats are using LeelaLicious’s Peanut Butter Overnight Oats’ recipe as the base (1 cup rolled oats, 1.5 cups almond milk, 2 tbsp. honey), but we’re adding 1 tbsp. vanilla extract, 1/4 cup strawberries, and some sliced almonds for crunch.  I hope it works out.

  • Brown rice – $1.69

Things I already have in the house but you may need to purchase: steel cut oats, almond milk, honey, apple slices, peanut butter.
